We recommend warming it up in an oven set to 325 with water in the bottom of the pan, covered with foil, until it reaches 135 degrees, letting it rest at least 20 minutes before cutting into it. This typically means 20-25 minutes per pound. About half way through we start basting with our favorite glace sauce roughly every 15-20 minutes.

To prepare Mangalitsa Delmonico pork steaks, they can be seasoned with salt and pepper, and then grilled, roasted, or pan-fried. They are best cooked to an internal temperature of 145°F (63°C), which will result in a tender and juicy steak with a slightly pink center.

XL Brats are extra large, third pounders, 4 per package for a package weight of ~1.3 lbs. The precooked regular size are approximately 5.3 oz each, 4 per package. All Brats are 100% Mangalitsa pork. If not designated as pre-cooked, they are raw and need cooked fully to 160 degrees F or more.

Nothing is more familiar on a summer grill than brats simmering in beer before being seared over hot coals. Here we’ll cover proper grilling for these fresh, raw bratwursts that are a hit at every cookout. The process is easy, and only takes five simple steps.
Light your coals and pile them all onto one side of your grill, leaving the other side empty. You’ll need both sides of the grill and both levels of heat to properly cook your brats.
Place your bratwursts in a full pan of beer on the grill. Any beer will do, but pale lagers work best! Boil in the beer bath for 10 to 15 minutes, or until the brats turn white. If not beer, try apple juice instead.
The casings on a fresh sausage will plump up with delicious juices as the meat inside heats up. Be careful not to pierce or break the skin, as those delicious beer-infused juices will escape. Instead of a fork, use a pair of long-handled tongs to move and rotate your brats throughout the cooking process.

Yes, these are exactly what their name implies. The cut is tender and loaded with flavor. Like ham hocks, pork cheeks have a lot of connective tissue and collagen, but when they are cooked for a long time, the meat breaks down and softens. The cheeks lend themselves to braising and are a great addition to a ragu. While the cheeks don't provide too much meat (they each weigh about a third of a pound), the meat is rich and worth seeking out.

Grilling
XL Brats are extra large, third pounders, 4 per package for a package weight of ~1.3 lbs. The precooked regular size are approximately 5.3 oz each, 4 per package. All Brats are 100% Mangalitsa pork. If not designated as pre-cooked, they are raw and need cooked fully to 160 degrees F or more.
Quick brat grilling tips:
Nothing is more familiar on a summer grill than brats simmering in beer before being seared over hot coals. Here we’ll cover proper grilling for these fresh, raw bratwursts that are a hit at every cookout. The process is easy, and only takes five simple steps.
Light your coals and pile them all onto one side of your grill, leaving the other side empty. You’ll need both sides of the grill and both levels of heat to properly cook your brats.
Place your bratwursts in a full pan of beer on the grill. Any beer will do, but pale lagers work best! Boil in the beer bath for 10 to 15 minutes, or until the brats turn white. If not beer, try apple juice instead.
The casings on a fresh sausage will plump up with delicious juices as the meat inside heats up. Be careful not to pierce or break the skin, as those delicious beer-infused juices will escape. Instead of a fork, use a pair of long-handled tongs to move and rotate your brats throughout the cooking process.
Once your brats are cooked through, you’ll want to sear them directly over the coals to achieve the crispy skin and grill marks we all love. Move the pan over to the cool side and remove the sausages, placing them directly over the coals. Watch your brats closely, and rotate to avoid burning. You will want even grill marks on all sides.

Yes, these are exactly what their name implies. The cut is tender and loaded with flavor. Like ham hocks, pork cheeks have a lot of connective tissue and collagen, but when they are cooked for a long time, the meat breaks down and softens. The cheeks lend themselves to braising and are a great addition to a ragu. While the cheeks don't provide too much meat (they each weigh about a third of a pound), the meat is rich and worth seeking out.
