Cut this belly slab into strips, cubes, matchsticks or any other shape/size you want.

A big part of what makes Mangalitsa pork special is its creamy, buttery fat, so we recommend not cooking this bacon until it’s completely crisp – much of the fat the fat will be rendered out and the bacon may be left too salty. Instead, cook it until the meat is cooked, but the bacon is still somewhat pliable.

Uncut, uncured bacon (no added nitrites/nitrates, except those that naturally occur in celery salt)
